Happy Memorial Day Week!

Its the beginning of Memorial Day week- the official start of Summer.  Here in Florida, summer started about a month ago with very warm temperatures.  It will probably abate when we go out of town or in late October.  Its the time of year when I consolidate and  replant my orchids.  I use the "only the strong survive" theory in repotting.  I will lighten up a little because of our very cool winter.   Its also the time of year when our entertaining comes inside for the most part, again due to the heat.  Last night I did whole chickens on the grill.  I stuffed the cavity with lemons that I pierced all over and the lemon lightly permeated the whole bird.  Its important to really tie the cavity closed or the lemon steaming doesn't happen.  Today, I am making chicken stock.  This is the 1st time I roasted all of the bones (which I store in freezer from previous chickens) prior to putting them in the soup pot.  The color is a rich dark brown and the house smelled so good!  Tonight is Pacific Halibut on the grill.  I use a cast iron skillet on the grill and the fish caramelizes ...oh, so good!  Thankfully, tomorrow is garbage day!  Enjoy the week!
